Weeknights can get hectic and it’s hard to find recipes that are both healthy and easy. After moving up to the Twin Cities, we started shopping at Aldi, and it’s been a game changer for both our budget and quick grocery runs. Here are some of our favorite weeknight meals that I’ve adapted from recipes I found on Pinterest:
1. Chicken Veggie Sheet Pan:

- 1 package chicken sausage
- 1 package mushrooms
- 1 package broccoli
- 1 package brussel sprouts
- 2 zucchinis
Cut the chicken sausage, zucchini, and sweet potatoes into slices. Add all ingredients to a sheet pan. Drizzle olive oil, parmesan cheese, and spices over the pan. Bake at 400 for 35 minutes.
2. Chicken Fajitas:

- 1 bag of chicken
- 2 cans diced tomatoes with chilies
- 3 peppers
- rice
- tortillas
Toppings:
- cheese
- salsa
- avocado
- black beans
- black olives
Put one can of chilies in the crockpot with half of the peppers, add the chicken, and then the other tomato can and peppers. Add cumin, paprika, and chili powder. Cook for 8 hours on low or 4 hours on high. Shred the chicken and serve over rice, in a tortilla, or on lettuce with various fajita toppings.
3. Beef Stir Fry:

- 1 pound ground beef
- 1 package stir fry vegetables
- 1 package broccoli
- soy sauce
- ginger
- rice
Brown the ground beef on the stove or a wok. Add in vegetables and soy sauce, ginger, and salt and pepper. Cook until vegetables are hot. Serve over rice.
4. Chicken Chili:

- 2 boxes of chicken stock
- 6 cans white beans
- 1 bag chicken
- 3 packet white chili mix
- rice
Add everything to the crockpot for 8 hours. Shred the chicken and serve with mozzarella cheese. Aldi has Italian bread loaves for $2. Bake the loaf and cut it and serve with a mixture of olive oil and spices for dipping.
5. Ground Turkey Hash:

- 2-3 sweet potatoes
- 1 pound ground turkey
- 6 eggs
- cheese
Brown the ground turkey on the stove. Cut up sweet potatoes into chunks and layer on skillet. Add ground turkey on top of sweet potatoes. Crack 6 eggs over the mixture and put in oven at 400 for 10 minutes. Add cheese and bake for 1 more minute.
Oh those fajitas look so yummy!
